Sirloin meatball soup with rice and mint.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 small onion, finely diced
  • 1 clove garlic, minced
  • 0.33333334326744 cup tomato sauce
  • water
  • 0.25 cup uncooked white rice
  • fresh mint or spearmint
  • salt
  • 1.5 pounds lean ground sirloin
  • 2 plum tomatoes, finely chopped
  • 2 tablespoons diced onion
  • 1 egg white
  • salt and pepper
  • 4 sprigs fresh mint or spearmint, minced
Instructions:
  • In a large stock pot, sauté onion and garlic in olive oil until translucent. Add tomato sauce, water, rice, mint, and salt, and simmer gently until flavors meld beautifully.
  • Combine ground sirloin, tomatoes, diced onion, egg white, mint, salt, and pepper. Shape mixture into small balls and gently drop into the simmering liquid. Cover and cook for 30 minutes until meat is done and rice is tender.
