Savor this Mexican-inspired chicken and pasta dish for a flavorful meal in under an hour.
Ingredients:
  • 8 uncooked manicotti shells
  • 1 1/2 cups cut-up cooked chicken or turkey
  • 1 cup shredded carrots (1 1/2 medium)
  • 1 cup ricotta cheese
  • 2 tablespoons sliced green onions
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1 cup salsa
  • 1/4 cup shredded Monterey Jack cheese with jalapeño peppers (1 ounce)
Instructions:
  • Preheat oven to 325°F. Follow package instructions to cook and drain manicotti shells. Combine chicken, carrots, ricotta cheese, onions, cilantro, and garlic. Stuff manicotti shells with chicken mixture.
  • Arrange the manicotti in a snug layer in a 13x9x2 inch rectangular pan. Pour the salsa generously over the manicotti and sprinkle with creamy Monterey Jack cheese. Cover the pan and bake for approximately 35 minutes until piping hot in the middle.
