Mexican chilli beef with popping corn

Spice up beef sausages with a zesty Mexican twist for a fast and delicious meal idea.
Ingredients:
  • 36.40 gm olive oil
  • 720g beef sausage
  • 1 brown onion, finely chopped
  • 2 tsp Mexican chilli powder
  • 410g can finely chopped tomatoes with tomato paste
  • 420g can red kidney beans, drained, rinsed
  • 2 x 125g cans corn kernels, drained
  • Fresh coriander leaves, to serve
  • Steamed rice, to serve
Instructions:
  • In a hot frying pan, add 2 teaspoons of oil. Remove sausages from casings and add them to the pan. Cook while stirring and breaking them into small pieces with a wooden spoon for 8 to 10 minutes until nicely browned. Place the cooked sausages on a paper towel-lined plate and wipe the pan clean.
  • Heat 2 teaspoons oil in a pan over medium-high heat. Sauté onion until softened, about 5 minutes. Add garlic and Mexican chili powder, cook until fragrant. Add sausage back to the pan along with tomato, beans, and 1/2 cup water. Bring to a boil, then simmer on low heat for 10 minutes until slightly thickened, stirring occasionally.
  • Pat corn dry on paper towel. Fry corn in remaining oil over medium-high heat until golden and popping, about 5 to 6 minutes. Drain on paper towel-lined plate. Serve sausage mixture with rice, topped with corn and coriander.
