Spicy Mexican carrot dish with jalapeños and onions for a flavorful side or snack.
Ingredients:
  • 6 carrots, peeled and sliced
  • 1 (16 ounce) jar sliced jalapeno peppers, with liquid
  • 2 onions, thinly sliced
  • 1 cup vinegar
Instructions:
  • Simmer carrots in a saucepan with enough water to cover until almost boiling, for 7 to 10 minutes. Drain and let cool.
  • Split the chilled carrots between two 1-quart glass jars. Layer onion and jalapeño peppers on top of the carrots, alternating until the jars are filled.
  • Combine the jalapeño pepper liquid and vinegar in a saucepan, bringing it to a vigorous boil. Remove from heat and fill jars with the mixture, sealing them with lids. Refrigerate the jars until cold, for a minimum of 8 hours.
