Classic Mexican huevos rancheros: Crispy tortillas topped with fried eggs, refried beans, and savory tomato sauce.
Ingredients:
  • 1 large Roma tomato
  • 1 green serrano chile
  • 1 clove garlic
  • 4 tablespoons vegetable oil
  • 2 corn tortillas
  • 4 tablespoons refried beans
Instructions:
  • 1. Boil a large pot of water. 2. Cook tomato, serrano chile, and garlic for 5 minutes. 3. Drain and allow to cool briefly. 4. Peel the tomato.
  • Blend together ripe tomatoes, spicy serrano chile, pungent garlic, a pinch of salt, and a dash of pepper in a blender until velvety smooth.
  • In a small skillet over high heat, warm oil. Quickly fry tortillas one by one until soft, not crispy, for about 10 seconds each. Transfer to a serving plate. Lower heat to medium, then crack eggs into the skillet and cook to your liking for 3 to 5 minutes.
  • Evenly spread a generous amount of flavorful refried beans on each tortilla. Crack an egg onto the beans and generously top with zesty tomato sauce. Serve promptly to enjoy the delicious flavors at their peak.
