Create a delicious Mexican lasagna using tortillas, seasoned ground beef, melted Colby-Jack cheese, and zesty taco sauce for a satisfying meal.
Ingredients:
  • 0.25 cup water
  • 1 (1 ounce) packet taco seasoning mix
  • 12 (8 inch) flour tortillas, or more if needed
  • 1 (14 ounce) can refried beans
  • 3 cups shredded Colby-Jack cheese
  • 1 (8 ounce) jar taco sauce
  • 1 cup shredded Colby-Jack cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch casserole dish.
  • In a hot skillet, brown the ground beef until crumbly and no longer pink. Discard any excess grease. Mix in water and taco seasoning, cooking until the mixture thickens, about 5 to 10 minutes.
  • Lay out 3 tortillas at the bottom of the casserole dish and layer half of the refried beans and ground beef on top. Sprinkle 1 cup of Colby-Jack cheese over the meat. Add another layer of 3 tortillas, followed by the remaining refried beans, half of the taco sauce, and another cup of cheese. Repeat with 3 more tortillas, the rest of the ground beef, and another cup of cheese. Finish with the last 3 tortillas and the remaining taco sauce on top.
  • Bake until the top tortilla layer is golden brown, which should take about 20-25 minutes, then generously sprinkle 1 cup of Colby-Jack cheese over the lasagna.
  • Preheat the oven's broiler.
  • Broil the lasagna until the Colby-Jack cheese is gooey and bubbling, for 3 to 5 minutes.
