Spicy chipotle prawn cocktails served in avocados - a deliciously modern Mexican twist for a light and satisfying lunch!
Ingredients:
  • 1 ripe tomato, finely chopped
  • 1 Lebanese cucumber, finely chopped
  • 1 green fresh jalapeño, deseeded, finely chopped
  • 1/4 red onion, finely chopped
  • 82.50 ml finely chopped fresh coriander
  • 20.00 ml tomato juice
  • 1 lime, juiced
  • 14 drops tabasco chipotle sauce
  • 2 large ripe avocados, halved, stone removed
  • 8 cooked prawns, peeled, leaving tails intact
  • Crumbled feta, to serve
  • Corn chips or corn strips, to serve
Instructions:
  • In a bowl, mix together the tomato, cucumber, jalapeno, onion, cilantro, tomato juice, lime juice, and Tabasco sauce.
  • Distribute the tomato mixture evenly into the avocado halves, then place the prawns on top and sprinkle with feta. Serve with corn chips.
