Flavorful tomato garlic onion soup with fresh herbs and Cotija cheese.
Ingredients:
  • 6 cups water
  • 1 cup rice, rinsed and drained
  • 2 tomatoes
  • 0.5 onion
  • 2 cloves garlic
  • 2 teaspoons chicken bouillon granules
  • 2 tablespoons vegetable oil
  • 1 pinch salt to taste
  • 5 tablespoons grated Mexican Cotija cheese
  • 2 sprigs parsley, chopped
Instructions:
  • Bring a pot of water to a lively boil. Stir in rice, then lower heat and cover. Let it gently simmer until rice is almost tender, around 15 minutes.
  • 1. Preheat a skillet over medium heat. Char the tomatoes evenly for 5 to 7 minutes. Peel and blend them with onion, garlic, and bouillon until smooth.
  • In a small saucepan, heat oil over medium heat. Pour in the tomato mixture and cook for 3 to 5 minutes until flavors meld. Combine with rice in the saucepan, season with salt, cover, and simmer over low heat until rice is tender, about 7 to 10 minutes. Remove from heat, sprinkle with Cotija cheese and parsley, cover, and let sit for 10 minutes before serving.
