Easy Mexican rice: Simmer cumin-seasoned rice in tomato sauce and broth for a flavorful side dish.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1 cup uncooked long-grain rice
  • 1 teaspoon garlic salt
  • 0.5 teaspoon ground cumin
  • 0.25 cup chopped onion
  • 2 cups chicken broth
  • 0.5 cup tomato sauce
Instructions:
  • In a large saucepan over medium heat, warm oil. Add rice and generously season with garlic salt and cumin. Cook while stirring constantly until rice is puffed and has a golden hue.
  • Saute onion until soft. Pour in chicken broth and tomato sauce; let it come to a boil, then lower the heat, cover, and simmer for 20-25 minutes. Fluff the rice with a fork.
