Ingredients:
  • 2 tablespoons Country Crock® Spread
  • 6 cups fresh corn kernels
  • 2 medium fresh jalapeno peppers, seeded and chopped
  • 2 cloves garlic, chopped
  • 0.25 cup mayonnaise
  • 0.25 cup chopped cilantro
  • 2 tablespoons grated cotija cheese
  • 2 tablespoons lime juice
Instructions:
  • In a large nonstick skillet over high heat, melt Country Crock. Add corn and salt, working in batches if needed to avoid overcrowding the skillet. Stir and cook until slightly charred, around 5 minutes. Then, add jalapeños, garlic, and cumin; cook until fragrant, about 1 minute.
  • Combine creamy mayonnaise, fresh cilantro, tangy cotija cheese, and zesty lime juice. Enjoy this delightful dish warm or at room temperature.
