Mexican-inspired stuffed bell peppers with salsa, rice, ground beef, and nacho cheese chips for a flavorful twist.
Ingredients:
  • 1 pound ground beef
  • 0.75 cup water
  • 1 (1 ounce) packet taco seasoning
  • 2 tablespoons vegetable oil
  • 1 cup white rice
  • 1 cup water
  • 1.5 cups chunky salsa
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 3 large green bell peppers, tops and seeds removed
  • 1 (8 ounce) package shredded Mexican cheese blend
  • 1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos®)
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Preheat a large skillet over medium-high heat. Brown the beef until crumbly, 5 to 7 minutes; drain any excess grease. Add taco seasoning and 3/4 cup water, simmer until liquid evaporates, about 5 minutes.
  • In a skillet, heat vegetable oil over medium heat. Cook and stir rice until fragrant and golden brown, about 5 minutes. Add 1 cup water, salsa, onion, and garlic; bring to a boil. Reduce heat, cover, and simmer until rice is tender and liquid is absorbed, about 15 minutes. Stir in ground beef mixture and enjoy!
  • Fill each bell pepper with a delicious combination of ground beef and rice. Top with a generous amount of Mexican cheese and crushed nacho cheese-flavored tortilla chips. Continue layering the ingredients inside the peppers, finishing with a final sprinkle of Mexican cheese on top. Place the stuffed peppers in a 9x9-inch baking dish.
  • Roast in the oven until the bell peppers are tender and the cheese is lightly golden, approximately 30 minutes.
