Zesty Mexican-style stuffed red bell peppers with cumin-seasoned meat and rice filling, topped with melted queso asadero for a creamy finish.
Ingredients:
  • 4 large red bell peppers, tops and seeds removed
  • 1 poblano pepper
  • 1.5 cups water
  • 1 cup uncooked white rice
  • 1 tablespoon vegetable oil
  • 0.5 cup chopped onion
  • 1 pound ground beef
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano leaves
  • 1 (10 ounce) can red enchilada sauce
  • salt and ground black pepper to taste
  • 1 cup shredded Asadero cheese
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and lightly grease a baking dish.
  • Arrange bell and poblano peppers in the baking dish. Roast in the preheated oven until poblano pepper skin wrinkles, approximately 20 minutes. Take out the poblano pepper, peel off the skin, chop into 1/4 inch pieces, and set aside.
  • In a pan over medium heat, combine the rice and water to a boil. Lower the heat, cover, and simmer for 20 minutes until water is absorbed. Then, remove from heat and set aside.
  • Start by sautéing the onion in a skillet until translucent and soft. Add the ground beef and cook until crumbly and browned. Drain any excess fat, then stir in garlic, cumin, and oregano. Cook until fragrant. Season with salt and pepper. Mix in rice, enchilada sauce, and poblano pepper until well combined. Adjust seasoning to taste.
  • In a saucepan over medium heat, melt the queso asadero until smooth, stirring constantly.
  • Reduce oven temperature to 350 degrees F (175 degrees C).
  • Fill bell peppers with heaping spoonfuls of the beef mixture. Spoon any extra beef mixture into the center of the baking dish. Top each pepper with a generous drizzle of cheese sauce and cover the dish with aluminum foil.
  • Bake peppers in a hot oven until the cheese sauce bubbles and the filling is heated through, around 35 minutes.
