South-of-the-Border Wraps

15-minute cheesy bean and veggie tortilla wraps with salsa. Perfect for a quick and satisfying dinner!
Ingredients:
  • 1 can (8 ounces) kidney beans
  • 1 can (8 ounces) whole kernel corn
  • 1 small bell pepper
  • 1/2 cup chunky-style salsa
  • 1 tablespoon chopped fresh cilantro or parsley
  • 4 flour tortillas (8 to 10 inches in diameter)
  • 1/2 cup shredded Cheddar cheese (2 ounces)
Instructions:
  • Strain the kidney beans and rinse under cool water before transferring to a bowl. Strain the corn as well.
  • Halve the bell pepper lengthwise, remove seeds and membrane, then finely chop enough to yield 1/4 cup. Store any extra bell pepper in the refrigerator.
  • Combine the beans, corn, bell pepper, salsa, and cilantro in a bowl.
  • Lay the tortillas out on a clean counter or waxed paper. Spread a generous 1/2 cup of the bean mixture evenly over each tortilla, leaving a 1-inch border. Sprinkle 2 tablespoons of cheese over each tortilla.
  • Fold the tortilla edges toward the center, leaving a 1-inch space over the filling. Roll up each tortilla starting from an open end. Arrange the wraps seam side down in the microwave-safe dish.
  • Microwave on High for 1 minute, then rotate the dish 1/4 turn. Continue microwaving for 1 to 1 1/2 minutes longer until done.
