South-of-the-border pizza: refried beans, salsa, pepper Jack cheese, green onions, romaine, ranch dressing - a delicious twist with a cooling touch.
Ingredients:
  • 0.5 (16 ounce) can spicy fat-free refried beans*
  • 1 cup salsa, divided
  • 1 (12 inch) pre-baked Italian pizza crust
  • 2 cups shredded hearts of romaine lettuce
  • 3 medium green onions, thinly sliced
  • 0.25 cup ranch dressing
  • 0.25 cup crumbled tortilla chips
  • 1 cup shredded pepper Jack or Monterey Jack cheese
Instructions:
  • Preheat the oven to 450 degrees and position the rack to the lowest level. Combine beans and 1/2 cup salsa in a medium bowl. Spread the bean mixture over the crust on a cookie sheet. Bake for about 10 minutes until crisp and warm.
  • Take out of the oven and generously layer with fresh lettuce, vibrant green onions, and a dollop of the remaining salsa. Pour the dressing over the pizza or simply use the easy-pour top if available. Add a layer of crunchy chips and a generous sprinkle of cheese. Return to the oven and bake until the cheese is melted, for approximately 2 minutes. Slice into 6 delicious portions and serve hot.
