Spicy bean and lamb Mexican pizza topped with avocado and sour cream, ready in just 30 minutes for a family favorite main dish.
Ingredients:
  • 500g Lamb Leg Steak
  • 2 large pizza bases
  • 420g can Mexican Style Chilli Beans
  • 40g baby spinach leaves
  • 75g pizza cheese
  • 2 avocados, stoned, peeled, coarsely chopped
  • Sour cream, to serve
  • Sweet chilli sauce, to serve
  • Coriander leaves, to serve
Instructions:
  • Preheat oven to 220C. Grease a barbecue grill or chargrill and heat on medium-high. Brown the lamb for 2 minutes on each side. Transfer to a plate and thinly slice.
  • On lined baking trays, arrange the pizza bases. Evenly layer the Mexican beans over the bases, then add the spinach, lamb, and cheese as toppings.
  • Bake until cheese is melted and lamb is perfectly cooked, about 12-15 mins.
  • In a bowl, gently mash the avocado with a fork. Top the pizzas with mashed avocado, sour cream, sweet chilli sauce, and fresh coriander leaves. Cut into slices before serving.
