South-of-the-border slushie

Cool off with a refreshing tequila slushie after a sunny day.
Ingredients:
  • 125ml (1/2 cup) cold water
  • 100g (1/2 cup) caster sugar
  • 1/2 ripe honeydew melon, halved, deseeded, peeled, coarsely chopped
  • 160ml (2/3 cup) silver tequila
  • 62.50 ml loosely packed fresh mint leaves
Instructions:
  • Combine water and sugar in a saucepan over low heat, stirring continuously for 2 minutes until the sugar dissolves. Take the saucepan off the heat and allow it to cool slightly.
  • Combine the sugar syrup and honeydew in a food processor and blend until smooth. Transfer the mixture to a shallow metal container, cover with foil, and freeze for 6 hours until nearly frozen.
  • Break up the honeydew mixture using a metal spoon. Combine honeydew mixture, tequila, and mint in a food processor, blend until smooth. Serve in glasses.
