Spicy chipotle-tomato shredded chicken on crispy tostadas - a beloved Mexican dish with tender onions.
Ingredients:
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 (15 ounce) can stewed tomatoes
  • 1 (7 ounce) can chipotle peppers in adobo sauce, or to taste
  • 2 pounds shredded cooked chicken meat
  • 16 tostada shells
  • 0.5 cup sour cream
Instructions:
  • In a saucepan, warm oil over medium heat. Cook onions until soft and see-through, approximately 5 minutes.
  • Blend stewed tomatoes and chipotle peppers in adobo sauce until smooth in a blender.
  • Pour the silky purée over the fragrant onions in the saucepan, then add the succulent chicken and gently mix everything together. Cover the pan and let it simmer on low heat for 20 minutes.
  • Pile chicken mixture onto tostada shells and top with a dollop of sour cream.
