Make juicy Mexican BBQ pork roast.
Ingredients:
  • 5.00 gm smoked paprika
  • 5.00 gm ground cumin
  • 2 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 4.80 gm sea salt flakes
  • 1 tsp freshly ground black pepper
  • 1.8kg Pork Leg Roast Boneless
  • Coles Brand Australian Superfood Leaf Blend, to serve
Instructions:
  • Preheat a covered barbecue on high heat, or preheat oven to 230°C.
  • Mix paprika, cumin, garlic powder, coriander, oregano, and salt in a small bowl. Coat the pork with the spice mixture. Transfer the pork to a disposable baking tray. Cook it over indirect heat in a covered barbecue for 30 minutes, then reduce heat to low (or 160°C) and continue cooking in the covered barbecue or oven for 1 hour and 30 minutes, until fully cooked.
  • Place the pork on a plate and cover it with foil. Allow it to rest for 20 minutes before serving with salad leaves.
