Indulge in a flavorful Lebanese grilled chicken and creamy homemade hummus platter just for you.
Ingredients:
  • 40.00 ml thick Greek-style yoghurt
  • 400g can chickpeas, rinsed, drained
  • Juice of 1/2 lemon, plus 1/2 lemon cut into 4 pieces
  • 180g chicken breast fillet, cut into 6 pieces
  • 1 tsp allspice
  • 9.20 gm olive oil, plus extra to drizzle
  • 1/2 roasted red capsicum, thinly sliced
  • 125.00 ml coriander leaves
  • Pinch of dried chilli flakes
  • Lightly grilled pita bread, to serve (optional)
Instructions:
  • Submerge 2 bamboo skewers in refreshing cold water for half an hour, then remove excess water.
  • In a food processor, blend together yogurt, half of the chickpeas, 1 teaspoon of cumin, and half of the lemon juice until creamy.
  • In a bowl, mix together chicken, allspice, garlic, oil, remaining 1 tsp cumin, and lemon juice. Let it marinate for 10 minutes.
  • Next, combine capsicum, coriander, and the rest of the chickpeas in a bowl. Drizzle with a bit of oil and toss to mix the salad.
  • Preheat barbecue or chargrill pan to high heat. Skewer chicken and lemon alternately onto skewers. Cook for 6 minutes, turning occasionally, until chicken is cooked through. Serve with chickpea salad, sprinkle hummus with chili, and enjoy with pita bread.
