Marinate chicken in sake, soy sauce, ginger, and sugar, then grill on skewers for a delicious Japanese yakitori appetizer.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup sake (Japanese rice wine)
  • 1 tablespoon white sugar
  • 1 tablespoon chopped fresh ginger
  • 1.5 pounds skinless, boneless chicken breasts, cut into 24 cubes
  • 4 green onions, cut into 2-inch pieces
  • 8 (6-inch) wooden skewers, soaked in cold water for 2 hours
Instructions:
  • Combine soy sauce, sake, sugar, and ginger in a bowl, then mix well. Add chicken cubes and ensure they are coated evenly. Refrigerate and marinate for 2 to 3 hours.
  • Skewer chicken cubes and green onions.
  • Transfer the marinade to a small saucepan and warm over medium heat until simmering. Then, lower the heat to keep it warm.
  • Prepare your outdoor grill by preheating it to medium-high heat and lightly oiling the grate. Grill the skewers until the chicken turns a delicious golden brown, which will take about 3 minutes. Flip the skewers over and generously brush them with the warm marinade. Continue cooking until the other side is beautifully browned, approximately 3 more minutes.
