Marinate chicken skewers overnight for delicious, flavorful results.
Ingredients:
  • 2cm piece ginger, finely grated
  • 2 long red chillies, seeded, finely chopped
  • 10.00 gm ground cumin
  • 5.00 gm sweet paprika
  • 1.25 gm smoked paprika
  • 1 lemon, zested, juiced
  • 60ml (1/4 cup) olive oil
  • 1kg chicken thigh fillets, trimmed, cut into 2cm pieces
  • Chargrilled flatbread (optional), to serve
  • 280g (1 cup) Greek Style Yoghurt
  • 1 clove garlic, crushed
  • 1 lemon, zested
  • 1 vine-ripened tomato, seeded, finely chopped
  • 40.00 ml finely chopped flat-leaf parsley
  • 40.00 ml finely chopped coriander
Instructions:
  • Combine garlic, ginger, chillies, cumin, paprika, lemon zest, lemon juice, oil, salt, pepper, and chicken in a large bowl. Mix thoroughly to marinate the chicken.
  • Skewer the chicken evenly and arrange them on a large baking tray. Cover and let them marinate at room temperature for 30 minutes.
  • For the yogurt sauce, simply put all the ingredients in a bowl, season to your liking, and mix well until combined. Enjoy 1 1/3 cups of delicious sauce!
  • Heat up a lightly greased chargrill pan or barbecue over high heat, then grill skewers, turning often, for 8 minutes until nicely charred and fully cooked.
  • Present the skewers on a platter accompanied by yogurt sauce and flatbread, if desired.
