Middle Eastern garlic and potato dip with olive oil and lemon juice, perfect for meats, sandwiches, or pita bread.
Ingredients:
  • 3 small russet potatoes, peeled
  • 1 head garlic, peeled and crushed
  • 1.5 teaspoons salt
  • 0.33333334326744 cup lemon juice
  • 0.5 cup canola oil
Instructions:
  • In a large pot, generously cover potatoes with salted water and bring to a boil. Reduce heat and gently simmer until tender, about 15 to 20 minutes. Drain and transfer to a bowl; mash until smooth. Let cool before using.
  • Combine garlic, salt, and lemon juice in a blender or food processor. Drizzle in enough oil to lightly coat the garlic. Blend on high and gradually pour in the remaining oil until smooth. With the blender still running, add mashed potatoes gradually. Transfer the sauce to a bowl and refrigerate for at least 1 hour, preferably overnight.
