Enjoy flavorful low-calorie Middle Eastern lamb burgers for a satisfying weeknight meal.
Ingredients:
  • 440g can beetroot slices, drained
  • 125.00 ml reduced-fat plain yoghurt
  • 1 garlic clove, peeled, quartered
  • 500g lean lamb mince
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1/2 red onion, finely chopped
  • 20.00 ml chopped fresh flat-leaf parsley leaves
  • 50g mesclun salad mix
  • 4 small Turkish bread rolls, halved, toasted
Instructions:
  • Blend beetroot, yogurt, and garlic until creamy. Reserve for later use.
  • In a large bowl, combine lamb, cumin, coriander, onion, and parsley. Season generously with salt and pepper. Shape into four 2cm-thick patties.
  • In a large non-stick pan, heat oil over medium-high heat. Sear patties for 5 to 7 minutes per side until golden and fully cooked.
  • Assemble sandwiches by layering salad on roll bottoms, then patties, beetroot mixture, and roll tops. Enjoy!
