Savor a Middle Eastern twist on Turkish gozleme with flavorful lamb filling and perfectly cooked dough.
Ingredients:
  • 56.88 gm extra virgin olive oil
  • 1/2 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 400g lamb mince
  • 3 tsp harissa Middle Eastern spice blend
  • 3.60 gm salt
  • 1/2 tsp ground black pepper
  • Fresh coriander leaves, to serve
  • Lemon wedges, to serve
  • 375.00 gm self-raising flour
  • 75.08 gm extra virgin olive oil
  • 4 tomatoes, sliced
  • 18.20 gm extra virgin olive oil
Instructions:
  • Prepare Flatbread Dough: Utilize an electric mixer with a dough hook to blend flour, salt, oil, and 3/4 cup water on medium speed until smooth, roughly 3 minutes. Cover the bowl with plastic wrap and allow it to rest for 5 minutes.
  • Heat 1 tablespoon of oil in a hot frying pan. Sauté onion and garlic for 1 minute. Add mince and cook for 3 minutes, breaking it up with a wooden spoon. Stir in spice blend, salt, and pepper. Brown the mince for 5 minutes. Transfer to a heatproof bowl, let it sit for 10 minutes, then cover and refrigerate until cooled, about 10 minutes.
  • 1. Preheat the oven to 100C/80C fan-forced. 2. Divide the dough into 4 equal portions. 3. Roll out each portion on a lightly-floured surface to create a 2mm-thick, 22cm x 50cm rectangle. 4. Spoon 1/4 of the mince mixture onto one half of the dough, leaving a 1cm border, and spread it thinly. 5. Fold the dough over to enclose the filling, pressing the edges together to seal. 6. Repeat the process with the remaining dough and mince, layering between sheets of baking paper.
  • Heat the remaining 2 teaspoons of oil in a large frying pan over medium-high heat. Add 1 flatbread to the pan and cook for 2 minutes until browned, pressing down with a spatula to flatten. Flip the flatbread and continue cooking for another 2 minutes, pressing with the spatula until crispy and cooked through. Transfer the cooked flatbread to a baking tray and keep warm in the oven. Repeat with the remaining oil and flatbreads in batches.
  • Create a visually pleasing Tomato Salad by layering fresh tomatoes on a serving plate. Sprinkle with a pinch of salt and pepper, then allow the flavors to meld for 5 minutes. Finish by drizzling with a combination of oil and refreshing lemon juice. Enjoy!
  • Cut each flatbread into 6 delectable pieces, then generously sprinkle with fragrant coriander. Serve alongside a crisp, refreshing salad and a squeeze of zesty lemon.
