Zucchinis stuffed with flavorful basmati rice, spiced lamb, and fresh mint - a delicious Middle Eastern delight!
Ingredients:
  • 0.25 pound ground lamb
  • 0.25 cup basmati rice
  • 2 cups tomato puree, divided
  • 0.5 teaspoon dried mint
  • 0.5 teaspoon salt
  • 0.125 teaspoon black pepper
  • 2 pounds small zucchini or yellow squash
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon juice
Instructions:
  • Combine the ground lamb, basmati rice, tomato puree, mint, salt, and pepper until evenly mixed; then set aside.
  • Trim the ends off the zucchinis and core out the centers using an apple corer before filling them with the flavorful lamb mixture.
  • Combine the leftover tomato puree with 1/2 teaspoon of salt in a large skillet. Gently nestle the stuffed zucchini into the sauce and pour enough water to cover them. Simmer over medium-high heat, then lower the heat to medium-low, cover, and let it simmer for 30 minutes.
  • Gently mix in the garlic, lemon juice, and the rest of the mint. Cover and let it simmer for another 15 minutes. Serve by slicing the zucchini into rounds and placing them on a serving plate. Drizzle the sauce on top.
