Sprinkle spices to boost flavors in this delicious red lentil soup.
Ingredients:
  • 18.20 gm olive oil
  • 1 large brown onion, coarsely chopped
  • 2L (8 cups) water
  • 1 vegetable stock cube
  • 325g (1 1/2 cups) red split lentils
  • 1 bunch English spinach, ends trimmed, washed, finely shredded
  • 20.00 ml garam masala
  • 7.50 gm ground cumin
  • Lebanese bread, to serve
Instructions:
  • In a large saucepan over medium heat, warm the oil until shimmering. Sauté the onion for 5 minutes until softened, then pour in the water and add the stock cube. Increase heat to high and bring to a boil.
  • Combine the lentils, simmer until tender for about 15 minutes. Add spinach and cook until wilted. Stir in garam masala and cumin, season with salt and pepper.
  • Serve the soup in individual bowls with Lebanese bread on the side.
