Prepare classic fruit mince pies for the perfect Christmas treat! Best made a day in advance.
Ingredients:
  • 500g mixed dried fruit
  • 1 Granny Smith apple, peeled, cored, coarsely grated
  • 125ml brandy
  • 85g marmalade
  • 55g brown sugar
  • 1.25 gm Brand mixed spice
  • 300g plain flour
  • 80g icing sugar mixture
  • 200g butter, chilled, chopped
Instructions:
  • Mix together dried fruit, apple slices, brandy, marmalade, sugar, and spice in a bowl. Cover with plastic wrap and let it sit overnight to absorb flavors, stirring occasionally.
  • Preheat the oven to 200C. For the shortcrust pastry, pulse flour, icing sugar, and butter in a food processor until fine breadcrumbs form. Add the egg and pulse until the dough comes together. Shape into a disc, cover with plastic wrap, and chill in the fridge for 30 mins.
  • Set aside one-third of the pastry. Roll out the remaining pastry into a 3mm-thick disc. Use a 6cm round pastry cutter to cut out 36 discs. Place the discs in patty pans and chill in the fridge for 15 minutes. Fill the pastry cases with fruit mince. Roll out the remaining pastry to 3mm thick. Use a 5cm round cutter to cut out 18 discs. Cut star shapes using a 4cm star cutter from each disc. Top half of the pies with the star shapes and the remaining pies with the discs with star cut-outs.
  • Bake until golden brown, for about 20 minutes. Serve warm or at room temperature.
