Sweet and delicious mince pies filled with homemade spiced mincemeat, perfect for a festive British treat!
Ingredients:
  • 2 medium Granny Smith apples - peeled, cored, and diced
  • 2 cups brown sugar
  • 1 cup raisins
  • 1 cup golden raisins
  • 0.75 cup dried currants
  • 4 tablespoons chopped candied orange peel
  • 1 medium lemon, zested and juiced
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground mace
  • 1 (15 ounce) package refrigerated dough for a double-crust pie, defrosted
  • 1 large egg, beaten
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • In a saucepan, mix apples, brown sugar, raisins, golden raisins, currants, orange peel, lemon zest, lemon juice, cinnamon, nutmeg, cloves, allspice, mace, and ginger. Bring to a boil over medium heat, then reduce to low heat. Simmer for 1 1/2 to 2 hours, stirring often. Let it cool while you make your pastry.
  • Unroll the pie crusts and fashion 24 circles by using a cookie cutter or the base of a mug.
  • Press a pastry circle into the bottom of each of the 12-cup cupcake tin. Spoon fruit filling into each pastry circle. Brush edges with beaten egg and top with remaining circles. Brush all mince pies with more beaten egg.
  • Bake until perfectly golden brown, about 35-45 minutes in the preheated oven.
