Elevate your holiday with decadent homemade mince pies, bursting with flavors that will make your taste buds dance. Start with high-quality mincemeat, then add special ingredients to make them absolutely irresistible. Indulge in this festive delight!
Ingredients:
  • unsalted butter for greasing
  • 375 g shortcrust pastry
  • plain flour for dusting
  • 200 g quality mincemeat
  • 1 splash of brandy, sherry or orange juice
  • ½ an eating apple
  • 2 balls of stem ginger
  • 50 g dried apricots
  • 75 g dried cranberries
  • 1-2 pinches of mixed spice
  • 1 large free-range egg
  • 1 tablespoon semi-skimmed milk
  • icing sugar for dusting
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4 and lightly grease a cupcake tray with butter. Roll out half of the pastry on a floured surface to 3mm thick, then cut out 12 circles. Chill in the fridge for 30 minutes. Mix mincemeat with brandy in a bowl, add chopped apple, ginger, apricots, cranberries, and mixed spice. Roll out the remaining pastry, cut out 12 circles for the pie lids. Fill the chilled pastry bases halfway with mincemeat, brush edges with egg wash. Top with pastry lids, crimp edges and add decorative shapes. Brush with egg wash again. Bake for 25 minutes until golden. Dust with icing sugar before serving. Enjoy!
