Elevate your minestrone soup with savory meatballs for a satisfying meal.
Ingredients:
  • 400g lean beef mince
  • 35g (1/2 cup) fresh breadcrumbs (made from day-old bread)
  • 1 brown onion, halved, finely chopped
  • 2 garlic cloves, crushed
  • Salt & freshly ground black pepper
  • 18.20 gm olive oil
  • 1 celery stick, trimmed, finely chopped
  • 1 carrot, peeled, finely chopped
  • 1 x 400g can chopped tomatoes
  • 500ml (2 cups) beef stock
  • 40.00 ml coarsely chopped fresh continental parsley
Instructions:
  • In a medium bowl, mix together the mince, breadcrumbs, half of the onion, and half of the garlic. Season with salt and pepper. Roll 1 tablespoon of the mixture into a ball and place it on a plate. Repeat with the rest of the mixture.
  • In a large frying pan, heat half of the oil over high heat. Cook the meatballs, turning occasionally, for 5 minutes or until they are golden brown all over. Remove from heat.
  • In a saucepan over medium heat, heat the rest of the oil. Add the celery, carrot, remaining onion, and garlic. Cook and stir for 5 minutes until the onion softens. Add the tomato and stock, bring to a boil, then reduce heat and simmer covered for 10 minutes until vegetables are tender.
  • Simmer meatballs for 3 minutes, then remove from heat. Season with salt and pepper, sprinkle with parsley, and ladle into serving bowls. Serve hot.
