Ingredients:
  • 250.00 ml flaked almonds
  • 125.00 ml dried cherries, roughly chopped
  • 62.50 ml plain flour
  • 40g butter
  • 53.60 gm golden syrup
  • 150g good-quality dark chocolate, chopped
Instructions:
  • Preheat the oven to 180°C and line 2 baking trays with baking paper. Mix almonds, cherries, and flour in a large bowl.
  • In a saucepan, melt butter with sugar and golden syrup over medium heat until sugar dissolves. Combine the butter mixture with the almond mixture and stir well.
  • On prepared trays, scoop level teaspoons of mixture 5cm apart. Use a small spatula to flatten into 3cm discs. Bake for 8 to 10 minutes or until dark golden. Allow to cool on trays.
  • Place the chocolate in a microwave-safe bowl. Microwave on high for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until melted and smooth. Allow the melted chocolate to cool and thicken for 4 to 5 minutes before using.
  • Spread the decadent chocolate over the base of the delicious florentines using a spatula. Place them on a wire rack with the chocolate side facing up and let them stand until the rich chocolate has set. Serve and enjoy these irresistible treats.
