Mini strawberry and almond tarts

Indulge in petite strawberry-almond tarts for a decadent treat.
Ingredients:
  • 3 eggwhites
  • 66.00 gm almond meal (ground almonds)
  • 99.00 gm icing sugar, sifted
  • 62.50 ml plain flour, sifted
  • 4.40 gm vanilla extract
  • 90g butter, melted, cooled
  • 9 strawberries, hulled, halved
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Grease two 12-hole, 1 1/2 tablespoon-capacity round-based patty pans. Cut 9 rounds from each pastry sheet using a 7cm cutter. Line 18 pan holes with the pastry rounds.
  • In a bowl, whisk egg whites until frothy. Add almond meal, icing sugar, and flour. Mix well. Stir in vanilla and butter. Spoon the mixture into pastry cases, filling them three-quarters full.
  • Gently place 1 strawberry half, cut side up, onto each tart. Bake for 18 to 20 minutes until beautifully golden and firm to the touch (if needed, cover loosely with foil to prevent excessive browning). Allow to cool in the pans, then sprinkle with icing sugar before serving.
