Mini Strawberry Rhubarb Lattice Pies

Mini strawberry and rhubarb pies baked in muffin cups, inspired by a nostalgic country fair, made effortlessly with Pillsbury refrigerated pie crusts.
Ingredients:
  • 1 tablespoon butter
  • 3 cups chopped fresh rhubarb
  • 3 cups fresh strawberries
  • 1 1/2 cups granulated sugar
  • Juice of 1 lime (1 to 2 tablespoons)
  • Dash ground ginger
  • Dash ground cinnamon
  • 1/2 cup cornstarch
  • 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
  • 1 egg white, well beaten
  • 1/4 cup turbinado sugar (raw sugar)
Instructions:
  • Preheat oven to 375°F and generously coat 6 regular-size muffin cups with cooking spray.
  • In a 10-inch skillet, melt butter over medium-high heat. Cook rhubarb until very soft, about 7 minutes. Add strawberries and granulated sugar, cook until slightly thickened. Remove from heat and stir in lime juice, ginger, and cinnamon.
  • Transfer the mixture into a blender. Add cornstarch, cover, and blend in short pulses until smooth. Set aside for later use.
  • Unroll the pie crusts on a large cutting board. Cut 3 (4-inch) rounds from each crust. Press the rounds into the muffin cups, allowing the crust edges to hang over the sides. Use a knife to trim the excess crust hanging over the edges for a neat finish.
  • Evenly distribute 1/2 cup of delicious strawberry-rhubarb filling among the crust-lined muffin cups.
  • With a pizza cutter, slice the leftover pie crust into 42 strips, each about 3 inches long and 1/8-inch wide. Weave 8 strips together to form a lattice square for each mini pie. Use a 2 1/2-inch round cutter to cut out the lattice square. Carefully place the lattice round over the filling in the muffin cup lined with crust. Fold the overhanging pie crust to meet the lattice top.
  • Using a pastry brush, gently coat the tops of each mini pie with beaten egg white, then sprinkle with turbinado sugar for a sweet finish.
  • Bake for 25 to 30 minutes until the filling is set and the crust is golden brown. Enjoy warm or chilled.
