Mini beef and tomato tarts

Impress guests with gourmet mini beef and tomato tarts at your next dinner party.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 250g 4 star beef mince
  • 2 tsp plain flour
  • 11.20 gm tomato paste
  • 18.30 gm Worcestershire sauce
  • 4.00 gm brown sugar
  • 2 x 50g tubs traditional gravy
  • 20.00 ml flat-leaf parsley, finely chopped
  • 3 sheets shortcrust pastry, just thawed
  • 24 cherry tomatoes
Instructions:
  • 1. Heat oil in a medium saucepan over medium heat until shimmering. Saute onion, stirring occasionally, for 5 minutes until softened. Introduce garlic and cook for an additional minute. Add mince and cook, breaking up any lumps with a wooden spoon, for 5 minutes until fully cooked.
  • Cook the flour, continuously stirring, for 2 minutes. Then, incorporate tomato paste, Worcestershire sauce, sugar, gravy, and 1/4 cup (60ml) water. Allow to cook for 5 minutes until thickened. Once done, transfer the mixture to a bowl and refrigerate for 10 minutes to chill.
  • Preheat your oven to 220C and grease a 24-hole mini muffin pan. Cut 24 discs from the pastry using a 7cm pastry cutter and line the pan with them. Fill each pastry case with the mince mixture and top with tomatoes. Bake for 15 minutes until the pastry is golden and crisp. Allow them to cool in the pan for 10 minutes before serving warm.
