Ingredients:
  • 1 (12 ounce) package vanilla wafers
  • 2 (8 ounce) packages cream cheese
  • 0.75 cup white sugar
  • 1 (21 ounce) can cherry pie filling
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C, Gas Mark 4) and prepare miniature muffin tins (also known as tassie pans) by lining them with petite paper liners.
  • Crush the vanilla wafers and evenly distribute 1/2 tablespoon of the crushed vanilla wafers into the paper-lined miniature muffin tins.
  • Combine cream cheese, sugar, eggs, and vanilla using an electric mixer until smooth. Fill each miniature muffin liner almost to the top with the mixture.
  • Once baked at 350 degrees F (175 degrees C) for 15 minutes, allow to cool before finishing with a dollop of cherry (or preferred flavor) pie filling.
