Create a family favorite by combining leftover chicken, frozen peas, and tikka curry paste into delicious skewers cooked in the oven for an easy and hassle-free meal.
Ingredients:
  • 40g butter, melted
  • 150g (1 cup) self-raising flour
  • 225g (1 1/2 cups) chopped cooked chicken
  • 80g (1/2 cup) frozen peas, thawed slightly
  • 80ml (1/3 cup) milk
  • 56.00 gm tikka curry paste
  • Lemon wedges, to serve
  • 200g plain yoghurt
  • 40.00 ml finely chopped fresh mint
Instructions:
  • Preheat your oven to 200C/180C fan forced. Use half of the melted butter to grease 2 x 12-hole round-bottomed patty pans.
  • In a large bowl, combine the flour and a generous pinch of salt. Add the chicken and peas, then create a well in the center. Whisk together the eggs, milk, and curry paste, and pour into the flour mixture. Gently fold everything together to combine.
  • Evenly distribute mixture into patty pans. Brush the surface with remaining butter using a pastry brush. Bake for 10 minutes or until gently springy. Let cool in pans for 2 minutes before removing with a small knife.
  • In a small bowl, mix together the yogurt and mint. Add a sprinkle of salt to season.
  • Present the fritters hot with a side of dip and lemon wedges.
