Mini goats cheese tartlets

Golden vegetarian pastry puffs - a crowd-pleasing sensation!
Ingredients:
  • 2 red onions, halved, thinly sliced
  • 65g (1/2 cup) craisins (dried cranberries)
  • 40.00 ml red wine vinegar
  • 45g (1/4 cup, lightly packed) brown sugar
  • 80ml (1/3 cup) water
  • 1 sheet (25 x 25cm) frozen ready-rolled puff pastry, just thawed
  • 100g goats cheese, crumbled
  • 35g (1/4 cup) pecans, coarsely chopped
  • Fresh thyme leaves, to serve
Instructions:
  • In a saucepan over medium heat, heat the oil until shimmering. Add the onion and cook for about 15 minutes, stirring occasionally, until it turns a beautiful golden color.
  • Combine the cranberries and vinegar in a small bowl and allow them to soak for 15 minutes.
  • Combine the cranberry mixture, sugar, and water with the onion in a saucepan. Simmer and stir occasionally for 10 minutes until the mixture thickens. Season with salt and pepper, then let it cool for 1 hour before using.
  • 1. Preheat the oven to 200°C and line 2 baking trays with non-stick baking paper. 2. Cut out 16 discs from the pastry using a 6cm-diameter round pastry cutter and place them on the baking trays. 3. Use a 4cm-diameter round pastry cutter to create a 1cm-wide border around the edge of each pastry disc without cutting all the way through. 4. Prick the center of each pastry disc all over with a fork.
  • Spread a generous 1/2 teaspoon of flavorful onion mixture onto each pastry disc. Add creamy goat cheese, crunchy pecans, and fragrant thyme. Bake for 12-15 minutes, or until beautifully golden. Enjoy your delicious creation!
