Indulgent mini peach cobblers with a boozy twist and aromatic Saigon cinnamon - the ideal summertime dessert.
Ingredients:
  • 10 large ripe peaches - peeled, pitted, and chopped
  • 0.5 cup white sugar
  • 0.25 cup vanilla extract
  • 0.25 cup bourbon
  • 0.25 cup cornstarch
  • 1 teaspoon cinnamon (such as Supreme Saigon®)
  • 0.5 teaspoon baking powder
  • 0.5 cup unsalted butter, at room temperature
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • In a bowl, mix peaches, sugar, vanilla extract, bourbon, cornstarch, and cinnamon until combined. The fruit filling will be juicy. Divide the mixture into 8 oven-safe ramekins placed on a baking sheet.
  • Roast in the already heated oven, without covering, for 35 to 40 minutes, gently stirring every 15 minutes.
  • In a bowl, combine flour, baking powder, and salt. Set aside. Use an electric mixer to beat sugar and butter until light and fluffy. Add egg and vanilla and mix until smooth. Gently stir in dry ingredients until just combined. Sprinkle crumble topping evenly over hot filling.
  • Place the dish back in the oven and bake for approximately 15 minutes, until the topping is golden brown and the fruit is bubbling irresistibly.
