Try these irresistible mini roast vegetable pizzas for a crowd-pleasing vegetarian party treat.
Ingredients:
  • 1 quantity pizza dough*
  • 130.00 gm basic or roasted tomato sauce*
  • 125g roasted eggplant
  • 200g roasted capsicum
  • 170g marinated artichokes
  • 82.50 ml pitted black olives
  • 250g bocconcini, chopped
  • Basil leaves, to garnish
Instructions:
  • Preheat oven to 230°C (450°F).
  • Gently press out the pizza dough to line six 10cm pizza trays brushed with a light coating of oil. Evenly spread tomato sauce on each base, then add a colorful array of vegetables, olives, and bocconcini. Bake until crisp, around 12 minutes. Serve adorned with fresh basil leaves for a finishing touch.
