Upgrade a boxed pie crust with creamy cheese, savory salmon, and fresh veggies for irresistible finger food!
Ingredients:
  • 1 container (8 oz) chives-and-onion cream cheese spread
  • 2 tablespoons capers
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon freshly ground pepper
  • 1 box refrigerated pie crusts, softened as directed on box
  • 1 egg, slightly beaten
  • 1/3 cup finely chopped red onion
  • 1/4 lb smoked salmon, broken into 14 pieces
  • Chopped fresh chives, if desired
Instructions:
  • Preheat the oven to 400°F. Combine cream cheese, capers, lemon peel, and pepper in a medium bowl, stirring until fully combined.
  • Trim the crusts from the pouches and gently unroll them on a lightly floured surface. Using a 4-inch round cookie cutter, cut out 7 rounds from each crust, reusing the scraps once. Spread approximately 1 tablespoon of cream cheese mixture on each round, leaving a 1/2 inch border. Neatly fold the edges of the crust over the filling, slightly pleating the crust if needed. Transfer to an ungreased baking sheet and brush the edges of the crust with egg.
  • Bake for 16 to 20 minutes until the crust turns a lovely light golden brown. Sprinkle each galette with a generous teaspoon of red onion, a piece of salmon, and chives. Enjoy warm.
