Whimsical Minion Cupcakes: Easy and festive treats!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix (or your favorite flavor)
  • Water, oil and eggs called for on cake mix box
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • Yellow liquid or gel food color
  • 16 large marshmallows
  • 32 brown candy-coated milk chocolate candies
  • 2 black licorice wheels
  • Betty Crocker™ black decorating gel
Instructions:
  • Preheat your oven to 350°F. Follow the instructions on the cake mix box to make the batter for 24 cupcakes. Bake the cupcakes as directed. Allow them to cool completely on a rack for about 15 minutes.
  • Set aside 2 tablespoons of frosting. Transfer the rest of the frosting into a medium-sized bowl and mix in yellow food coloring. Use the yellow frosting to ice the cupcakes.
  • Trim both ends of 16 marshmallows with kitchen scissors to create 32 rounds, each about 1/4-inch thick.
  • Use leftover frosting to attach milk chocolate candies onto marshmallows. Adorn cupcakes with marshmallow eyes, featuring two eyes on some cupcakes and one eye on others. Cut 2 small pieces of licorice rope for each cupcake and position them next to the eyes. Finish by piping a mouth with black decorating gel on each cupcake.
