Spicy piri piri and refreshing mint elevate these simple kebabs to a must-try sensation.
Ingredients:
  • 82.50 ml coarsely chopped fresh mint
  • 7.50 gm piri piri seasoning (MasterFoods brand)
  • 12 (about 500g) chicken tenderloins
  • Olive oil, to grease
  • Low-fat natural yoghurt, to serve
Instructions:
  • In a large bowl, mix together the fresh mint, piri piri seasoning, and minced garlic. Add the chicken and stir until evenly coated.
  • Skewer the chicken and cook in a non-stick pan brushed with oil until golden brown and cooked through. Keep warm under foil after transferring to a plate. Repeat for the rest of the chicken skewers.
  • Present the mint & piri piri chicken skewers on a grand serving platter. Enjoy promptly with yogurt and the vibrant carrot & radish salad.
