Delicious and aromatic minted barley pilaf with carrots and onions - a tasty twist on classic rice pilaf.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 small carrot, chopped
  • 1 stalk celery, chopped
  • 1 cup pearl barley
  • 1.5 cups chicken stock
  • 0.75 cup water
  • 2 teaspoons dried thyme
  • 2 teaspoons dried sage
  • 5 large fresh mint leaves, chopped, or more to taste
Instructions:
  • In a heavy-bottomed pot over medium heat, sauté onion in olive oil until translucent, for about 5 minutes. Stir in carrot, celery, and salt; continue to cook and stir for 2 minutes. Add barley, ensuring it's coated with oil, and cook until golden brown, around 5 minutes.
  • Mix together chicken stock, water, thyme, and sage with the barley. Cover the pot and bring it to a boil. Reduce the heat to medium-low and let it simmer until the liquid is absorbed, approximately 45 minutes. Remove the pot from heat and stir in the mint. Cover the pot and let the flavors blend for 5 to 10 minutes before serving.
