Minted Cranberry Relish

Tangy mint cranberry relish - a flavorful condiment for any meal.
Ingredients:
  • 1 small seedless orange, quartered
  • 2 cups fresh or frozen (thawed) cranberries
  • 1/2 cup sugar
  • 3 tablespoons chopped walnuts
  • 2 tablespoons chopped fresh mint leaves
  • 1 tablespoon orange-flavored liqueur, if desired
Instructions:
  • Place orange pieces in a food processor bowl with a metal blade. Cover and process in quick on-and-off motions for about 15 seconds until finely chopped. Add cranberries and process until finely chopped.
  • In a nonmetal container, mix together cranberry mixture, sugar, walnuts, and mint. Add liqueur and stir. Allow to sit for at least 3 hours to meld flavors. Refrigerate and enjoy within 1 week.
