Deliciously sweet and crunchy snap peas, lightly cooked to preserve their fresh flavor.
Ingredients:
  • 10.00 gm boiling water
  • 5.00 gm caster sugar
  • 250.00 ml fresh mint leaves, chopped
  • 40.00 ml white balsamic vinegar
  • 400g sugar snap peas
Instructions:
  • Combine water and sugar in a small bowl, stirring until sugar dissolves. Add mint and vinegar, then mix well. Season with salt and pepper.
  • Boil sugar snap peas in a big saucepan of salted water for 2-3 minutes until they are tender-crisp. Then, drain them.
  • Combine the peas with the mint sauce and transfer to a serving dish.
