Minted-papaya pineapple salad

Ingredients:
  • 1/2 red papaya, peeled, deseeded, sliced
  • 1/4 pineapple, peeled, sliced
  • 18.00 gm white sugar
  • 40.00 ml mint leaves, shredded
  • 1 lime, juiced
  • 4 scoops sorbet, (see note) to serve
  • Lime wedges, to serve
Instructions:
  • Arrange the papaya and pineapple elegantly on plates.
  • Crush sugar and mint in a bowl using the end of a rolling pin. Sprinkle 1 teaspoon of the minted sugar over the fruit, then drizzle each with 2 teaspoons of lime juice. Serve with sorbet and lime wedges.
