Whip up a zesty tomato salsa with veggies, mint, and citrus in just 20 mins. Perfect with grilled pita bread!
Ingredients:
  • 1 large red or yellow tomato, seeded, chopped
  • 1/4 cup chopped cucumber
  • 1 tablespoon chopped green onion (1 medium)
  • 1 tablespoon chopped fresh mint leaves
  • 2 tablespoons olive oil
  • 1 small clove garlic, finely chopped
  • 2 pita (pocket) breads (6 inch)
Instructions:
  • Preheat gas or charcoal grill. Combine all salsa ingredients in a medium non-metal bowl and chill in the refrigerator.
  • Combine fragrant garlic with oil in a small bowl. Carefully cut around the edges of each pita bread with a sharp knife or kitchen scissors to separate them into 2 rounds.
  • Coat each pita round with the oil mixture and grill over medium heat for 2 to 3 minutes until golden and crispy. Cut into wedges and enjoy the warm pita chips with salsa.
