Lebanese rolls with minted lamb & tomato

"Portable Lebanese rolls, ideal for on-the-go snacking at sports events and picnics."
Ingredients:
  • 8 (about 450g) lamb fillets
  • Olive oil, for brushing
  • 3 large Lebanese breads
  • 180g (1/3 cup) hommus
  • 1 bunch fresh mint leaves picked, coarsely chopped
  • 2 medium ripe tomatoes cut into 1.5cm pieces
Instructions:
  • Heat up the grill on medium-high heat.
  • Brush the lamb fillets with olive oil, then grill for 4 minutes on each side for a perfect medium cook. Let it rest for 10-15 minutes before serving.
  • Slice the Lebanese breads in half, generously spread each half with hoummus, and carefully roll them into cone shapes.
  • Take each roll and position it on a large serviette or a 30cm square of greaseproof paper, ensuring there is an 8cm overhang at the bottom. Wrap the serviette or paper around the bread and twist firmly to seal at the base.
  • Slice the lamb fillets into 1.5cm-thick pieces. Mix the lamb, mint leaves, and tomatoes in a bowl, season with salt and pepper, then fill each roll with the lamb mixture.
