Light and zesty lime and mint freezer pie with creamy Neufchatel cheese and reduced-calorie whipped topping.
Ingredients:
  • 2 (8 ounce) packages PHILADELPHIA Neufchatel Cheese, softened
  • 0.5 cup sugar, divided
  • 1 (3 ounce) package JELL-O Brand Lime Flavor Gelatin
  • 1 tablespoon lime zest
  • 0.25 cup fresh lime juice
  • 1 (8 ounce) tub COOL WHIP LITE Whipped Topping, thawed
  • 1 tablespoon chopped fresh mint
  • 1.5 cups finely crushed pretzels
  • 6 tablespoons butter or margarine, melted
Instructions:
  • Prepare a 9-inch round pan by lining it with plastic wrap, leaving the ends to hang over the sides. Using a mixer, blend Neufchatel cheese and 1/4 cup sugar until smooth. Then add the dry gelatin mix, zest, and juice, and mix thoroughly.
  • Gently fold in COOL WHIP and fresh mint, then pour mixture into the prepared pan. Combine pretzel crumbs, the rest of the sugar, and melted butter, then sprinkle over the pudding layer. Cover the dessert with plastic wrap and press the crumb mixture gently into the filling.
  • Chill for 3 hours until solid. Unmold dessert onto a plate, removing pan and plastic wrap. Allow dessert to sit at room temperature for 15 minutes to slightly soften before slicing and serving.
