Grill chicken in Chef John's miso-honey marinade for a simple, flavorful dish with a hint of magic.
Ingredients:
  • 3 tablespoons white miso
  • 2 tablespoons honey
  • 0.25 cup rice vinegar
  • 2 teaspoons hot sauce
  • 1 tablespoon kosher salt
  • 1 whole chicken, halved, wing tips separated
  • kosher salt to taste
  • 0.5 lemon, cut into wedges, or to taste
Instructions:
  • In a bowl, blend miso and honey, then add rice vinegar, hot sauce, and 1 tablespoon salt. Whisk vigorously until smooth.
  • Score the legs and thighs of chicken halves with 3 to 4 slashes. Coat the chicken thoroughly with the marinade and refrigerate for 2 to 12 hours.
  • Turn the chicken over in the bowl and generously sprinkle with more kosher salt.
  • Preheat the grill to 350°F (175°C) using indirect heat.
  • Grill chicken covered for 20 minutes, then flip and grill for another 20 minutes.
  • Baste chicken with leftover marinade. Cover and cook until thighs reach 165 degrees F (74 degrees C) with an instant-read thermometer, about 5 to 10 minutes.
  • Serve the chicken with lemon wedges dusted with cayenne pepper. Drizzle the spicy lemon juice over the sliced chicken pieces.
